Cacao and Berry Layered Smoothie

Hey everyone! It’s been so hectic at uni with my exams, rowing training schedule, and general life so I’ve taken a bit of a break from blogging, but I’m back with a new breakfast recipe featuring Vita Coco’s new Coconut Milk – a dairy-free alternative which is a perfect substitute for regular milk. It’s generally been so much fun to experiment around with their new Coconut Milk Alternative so I hope that you’re inspired to do the same.


CACAO & BERRY LAYERED SMOOTHIE

Ingredients:

1 frozen banana

1 cup almond milk

2 tbsp oats

handful of berries

1 tsp cranberry and lingonberry powder (optional)


1/2 medium avocado

2 tbsp cacao powder

3 dates (soaked if needed)


Method:

  1. Blend the first 5 ingredients until super smooth and creamy. Pour half of the mixture into a glass or jar.
  2. Add the rest of the ingredients to the remaining smoothie mix and blend once again.
  3. Carefully pour the chocolate smoothie into your serving jar or glass then pour a layer of the berry smoothie mix.
  4. Alternate between the smoothie mixes.
  5. Then top with some nibbles and more fruit!

Matcha Chia Pudding Parfait

MATCHA CHIA PUDDING PARFAIT (with accompanying video recipe HERE or see below for embedded video!!)


Ingredients:

For the chia pudding:


For the smoothie:

  • 1 ripe banana
  • 1/2 mango, frozen
  • 200 ml Cocofina coconut water {use discount code MONIFOLLOWERS15}
  • Handful of raspberries


Method:

  1. Mix the chia seeds and matcha powder in a small bowl or glass, and pour in the plant-based milk. Stir well until all the ingredients are incorporated before adding the agave nectar, if using. Refrigerate overnight or for at least 3-4 hours.
  2. Remove the chia pudding from the fridge. Transfer half the chia pudding into another bowl or jar (if serving two) and top with fruit and/ or Go Green Wholeplus Toppers.
  3. Add all the smoothie ingredients into your blender, except the raspberries, and blend until smooth. Pour about 2/3 of the smoothie over the chia puddings.
  4. Add the raspberries to the remaining smoothie mixture and blend well. Pour over the tropical smoothie.
  5. Top with fresh fruit & ENJOY!

Very Berry Pitaya Smoothie

After spending three weeks touring China and experiencing a different culture, it would be unthinkable to not write a few blog posts/ recipes dedicated to my travels. Having been inspired the many food markets and street vendors of Chengdu; Guilin; Guangzhou; Hong Kong; and Yangshuo, I decided to buy some local food products and experiment around with them. Here’s the first recipe I’d like to share with you all: a dragonfruit and lychee-based smoothie! Although pink pitaya and lychee are difficult to source outside of South America and Asia, you can try track them down at Asian markets or the worldwide aisle in big supermarkets. Alternatively, you can buy powdered pitaya in pouches to get that truly gorgeous, deep pink colour ❤

VERRY BERRY PITAYA SMOOTHIE

Ingredients:

1/2 pink dragonfruit

3 lychees, peeled and pit removed

2 medium-sized bananas

1 handful frozen blueberries

1 handful frozen strawberries

1 handful frozen raspberries

1tbsp cranberry powder (Optional: for extra vibrance)

1tbsp coconut sugar (Optional: for extra sweetness)

100ml almond milk

Suggested toppings: Creative Nature chia seeds, crumbled health bars

Method:

  1. Combine all the listed ingredients into a blender.
  2. Blend on medium to high for 40 seconds, or until smooth. Alternatively, if you use a BlendTec, select the “Smoothie” programme.
  3. Pour into a glass or bowl & enjoy!

I am so honoured to say that I had the opportunity to sample and review some of their products as below…

RASPBERRY, APPLE & PEAR RAW FRUITY JUICE: Blissful explosion of sweet berries – I love love love this juice! Definitely my favourite as it’s sweet (raspberries naturally contain xylitol), tangy and berry gorgeous. The intense raspberry flavour is exquisite, and of course the ingredients are just 100% raw fruits! Not only is the taste on point, the fruits – apple, raspberry and pear – will also help you to immune your body. Specifically, raspberries are high in Vitamin C; whereas apples are rich in Vitamins A, B & C as well as minerals such as iron; whilst pears contain high levels of boron which helps the body retain calcium and prevent osteoporosis! The incredible immune-building health benefits are just a bonus to the delicious taste, so it’s a no brainer as the perfect drink to accompany your breakfast on-the-go.    

CARROT, APPLE & ORANGE RAW FRUITY JUICE: I really enjoyed this juice as you could tell that it was made from simply 100% natural, raw fruits (and their goodness) and nothing else! The carrot juice was deliciously sweetened with the addition of the orange and apple juices to constitute a refreshing drink which wasn’t overly decadent. Loaded with vitamins and live nutrients, it’s perfect to help fight viral infections plus is generally extremely nourishing… You can have your daily requirements on Vitamin A just by having this bottle! What is also amazing is that carrots are rich in beta-carotene which helps improve vision, apples help detoxify the liver and boost immunity, whilst oranges have Vitamin C and flavonoids to protect against heart disease – WOWZA! I drank this after lunch to really notice it’s amazing effects 🙂

    

RAW VEGGIE AVOCADO, SPINACH & MANGO SMOOTHIE: An interesting combination of veggies and fruits which you might not expect to work but it did actually taste quite good! The mango was the strongest flavour with the spinach and avocado subtly adding a hint of green veggies into the mix. The joy of this cleanse is that all green leaves are abundant in chlorophyll which cleanses and hydrates the intestines. This bottle has more than 50% of your daily requirements on Vitamin A, C & K. With spinach, avocado, mango and apple being the natural anti-inflammatory that boost your energy, this is definitely the smoothie to have along side your breakfast in the morning.

 

SPIRULINA, APPLE & MINT SMOOTHIE: I’m going to be brutally honest with you all and say that I really didn’t enjoy this smoothie. I absolutely hate mint and felt that it was all I could taste when drinking this, despite the base of mango and apple juice. Nonetheless, the nutrients are worth battling through the not-so-nice taste as when you replenish your system with fresh, raw superfoods, they deeply nitrify and purify you! This vitamin formula of loads of green super powers and sea greens is low in calories but brimming with nutrients. This little booster is cleansing as it is super green which makes it alkaline. The health benefits are truly remarkable: the smoothie contains the green pigment chlorophyll which oxygenates the tissues of the body whilst contains food state Vitamin C to boost immunity. Moreover, it is an excellent source of gentle fiber due to the linseed. So drink up! (Your body, not your tastebuds, will thank you for it.)

 

RAW WHEATGRASS SHOTS WITH FRUIT JUICES: These products come in three flavours: mango juice, mandarin juice, strawberry juice and contain 100% Raw Wheatgrass. I am completely surprised to say that I actually enjoyed drinking these wheatgrass shots! Usually I recoil at even the thought of wheatgrass, but the addition of the various fruit juices make it a pleasurable experience and not so horrifying (mandarin is definitely the nicest one!) The benefits are totally worth the little unpleasant aftertaste – wheatgrass is actually known as the “liquid gold”! It contains 12 amino acids which are the building blocks of protein. It’s rich in chlorophyll, which has a molecular structure almost identical to blood. It helps to cleanse the cells and purify the blood. By having 2 shots per day you will definitely see your body changin. I took a half shot before then the rest of the bottle after lunch and certainly felt the detoxing effect the next morning!

Super Green Vegan Smoothie

SUPER GREEN VEGAN SMOOTHIE 

Ingredients:

200ml unsweetened almond milk OR coconut water

1tbsp almond/ peanut butter

1 handful spinach

1⁄2 Haas avocado, peeled & pitted

1tsp chia seeds OR 1tbsp mulberries

1 overripe banana

1tsp each of chlorella, wheatgrass, moringa, hemp protein powder

Method:

  1. Add almond milk, nut butter, spinach and avocado to blender jar.
  2. Hold blender lid and blend on low for 10 seconds.
  3. Add remaining ingredients and place blender lid on jar.
  4. Blend on a low speed for 10 seconds, then a medium speed for 10 seconds, then Medium-High speed for 40 seconds.
  5. Pour smoothie into a bowl and decorate with your favourite toppings.

Tossed Review

When the lovely people at Tossed messaged me, inviting me to review their food, I couldn’t turn down that offer! I was so excited to make my way to their store in Baker Street (yes the road where Sherlock Holmes ‘lives’!) as I’ve been meaning to stop by for ages, and this gave me the perfect excuse to kick my ass into gear and finally find out what everyone on social media is raving about – and I wasn’t disappointed, oh no!

Tossed pride themselves as having a simple mission: to create a new, healthy and exciting food experience, that doesn’t compromise on taste or portion size, for the UK market. They believe that healthy eating isn’t – and shouldn’t be – boring. To them, it’s about following a balanced diet that includes lots of fresh vegetables, lean protein, low GI carbs and the occasional treat as a reward!

By keeping food simple, fresh and natural, you can eat to your heart’s content.

At Tossed, you can create your own lunchtime masterpiece using their extensive range of fresh, locally sourced, seasonal ingredients. Alternatively, like me, you can opt for one of their signature house salads, wraps, toasties, soups, pho and breakfast dishes, all of which undergo rigorous taste tests and only the very best recipes make the cut. Amazingly, all their food is made fresh on site daily so healthy eating on-the-go has never been easier. And with both vegetarian and vegan options also available, there’s no excuse not to pop in ASAP! 

 

As I mentioned, I ordered a pre-set dish from their menu and chose the Thai Green Tossed Pot with chicken. The service was really quick and I had my hot food served to me, all packaged and ready to go, even before I finished deciding which smoothie to order! I ate in-store as I simply loved the atmosphere (quirky, stylish and fun decor with lively music to suit the energy of the place and staff’s spirit) and was surprised to have my smoothie brought to me at my table, unlike at other takeaway places where you have to wait around the till for your order. The staff really cater their service to your convenience and is just an added bonus to the fact that their food is nourishing and satisfying, having a low GI content to provide longer-lasting energy. Therefore, it’s safe to say that I’m 10000% happy with service as the employees are so friendly and welcoming – I was greeted on my way in by a worker (even before they recognised who I was and knew that I would be reviewing them)! 

 

Another important point for me was that Tossed is conscious not to further endanger our vulnerable planet and so sell their food in environmentally friendly packaging. Their bowls are recyclable; their smoothie cups are made from 70% recycled plastic; and their menu is produced from 100% recycled materials!

– THAI GREEN TOSSED POT:

soy bean sprouts, carrot, red onion, spicy Thai dressing, coriander & mango slaw, crispy shallots, Thai green sauce, supergrains

I truly have nothing negative to say about this main, it ticked all the right boxes and more! Starting with the spicy Thai dressing and ending with the crispy shallots, this hot dish is beyond delicious. Every single ingredient is added for a reason – either for flavour, texture or nutrition – and not just thrown in for no reason: the spicy Thai dressing provided flavour, the supergrains constituted a satisfying meal whilst adding nutrients, and the mango/ vegetables presented the dish with a vibrant colour, varying textures as well as wholesome flavours! 

 

Even though I’m not a fan of hot, spicy food, I loved the kick which accompanied every constituent of this Tossed Pot – it was just enough to excite your taste buds but not too overwhelming so that you wouldn’t be able to finish your meal. The spicy Thai dressing was in fact more like a broth as it was quite thick, but jam-packed with flavour which was soaked up by the grains and other ingredients (not just a sauce which is left in a puddle at the bottom, having dripped off everything) so that everything was a bombshell of Thai flavours. This meant that none of the ingredients were bland – every mouthful was orgasmic for my taste buds! And also, this burst of spices was perfectly softened by the refreshing, cool mango and thus never overpowered the other ingredients in the dish.

 
What I also enjoyed was that the chicken was cooked beautifully so that it was soft and superbly complemented the more crunchy texture of the supergrains and crispy shallots. I was also pleasantly surprised by the fact that the soy bean sprouts were cooked thoroughly until soft, rather than left raw and crunchy like in most salads. However, my favourite component of the dish had to be the ‘mango slaw’ as (well, I love all things tropical anyway) it was incredibly flavoursome, subtly lending a tropical taste to the whole dish and complementing the other spices as well as heightening the general tasting experience! 

 

From a foodie/ aesthetics point-of-view, I was also happy to see the addition of the carrot strips, mango and parsley as they all provided the Tossed Pot a gorgeous colour to make the whole dish even more appetising and appealing to the eye! This simply made the entire tasting experience even more sensuous so that I eagerly finished off every last bite (and wanted more even though I was so stuffed). Despite being served a very generous portion – I ordered a medium not even a large – and feeling full half-way through, I practically scraped the bowl clean as I’d never tire of this ass-kicking dish which is chockfull of flavours and nutritional yumminess! 

 

– PASSIONISTA SMOOTHIE:

As a massive fan of smoothies who drinks them almost everyday, I do consider myself a Smoothie Queen so am very judgmental and brutally honest if I buy a smoothie that is not up to my standards. With that in mind, it means even more when I say that Tossed‘s Passionista Smoothie was the bomb! 

 

It was just the right consistency for me: thick enough so that it wasn’t watery but not so much so that it was difficult to drink. The smoothie felt so refreshing since it was cold and bursting with fruit. Because it was blended fully, the texture was really smooth and free of any chunky bits which would get stuck in your straw and block it, making it the perfect on-the-go snack to boost not just your mood but your vitamin intake too 🙂

I probably loved it so much because the Passionista Smoothie is sweet, having banana as one of its main components which not only provides the sweetness but also presents the smoothie with a thick, slightly frothy texture whilst being deliciously satisfying. Also, the combination of strawberries with banana is heavenly and the strawberry taste comes through strongly as does the topical taste of the mango and zesty, citrusy flavour of the orange (the passion fruit is slightly lost amongst the fruity flavours but that’s not a criticism).

Once again, the bright, attractive orangey-pink/ peach colour appealed to my sense and taste receptors in anticipation, prior to drinking. Sipping these vibrant, citrusy and tropical flavours was even more vivaciously fruity than its luscious colour and sent my serotonin levels rocketing! Plus, like with the main, the portion size was very generous so was also really filling – not to mention that it constitutes 3 portions of your 5-a-day… What more could you want!? 

 

All in all, I was completely blown away by the impressive service, quality of food and amiable atmosphere; I can’t wait to pop in again and am already choosing my next meal here – their menu is just so appetising with mouth-watering options!

‘Lean Green Machine’ Smoothie

‘LEAN GREEN MACHINE SMOOTHIE’

Ingredients:

250ml Pineapple CocoPro

1 sachet Love Your Blender Bright Greens

1 banana

1/2 ripe Haas avocado

1 ripe red apple (chopped into small enough pieces for your blender)

1tsp wheatgrass

1tsp maca powder

1tsp stevia/ coconut palm sugar/ other sweetener

5 pitted dates


Method:

  1. Add coconut water, fresh fruit and powders to smoothie first. Blend until completely smooth.
  2. Add smoothie pack and dates then blend until it reaches desired consistency.
  3. Top with fresh fruit, granola, a chopped Creative Nature bar or whatever you fancy. Or, pour straight into a tumbler and enjoy!

TIP: Prepare, wash and measure out the dry ingredients the night beforehand and seal in an air-tight container to place in the fridge overnight if you’re in a rush.
