Greenyilicious Oatmeal

Method:

  1. Combine all the ingredients for the greenyilicious oatmeal in a pan until the mixture is smooth and free of lumps.
  2. Cook the oatmeal on a medium-low heat until the milk no longer separates from the oats, when stirring with a wooden spoon, and the desired consistency is reached. (Note: Some people like to add in the mashed banana after cooking but I do this before cooking; it’s completely up to you!)
  3. Carefully remove the oats from the hob and allow to cool for a few minutes whilst you prepare the toppings/ wash the fruit.
  4. Pour the oatmeal into a breakfast bowl and smooth out the top, using the back of a spoon.
  5. Sprinkle with your desired toppings & ENJOY!

Choco-Orange ‘Jaffa’ Oatmeal

CHOCO-ORANGE ‘JAFFA’ OATMEAL

Get both chocolately and zesty with this delicious breakfast bowl of oatmeal! So quick and easy to make – there’s no excuse not to cook up a storm.


Ingredients

40g jumbo rolled oats

1 ripe banana, mashed

1 sachet STRIPPD Vegan Chocolate Protein Blend

2-3tbsp Aduna Super Cacao Powder

Juice of 2 large organic oranges

250ml plant-based milk e.g. unsweetened almond, coconut, soya (I use Alpro Unsweetened Almond milk)

Method:

  1. Combine all the ingredients for the oatmeal in a cooking pots until the mixture is smooth and free of lumps.
  2. Cook the oatmeal on a medium-low heat until the milk no longer separates from the oats, when stirring with a wooden spoon, and the desired consistency is reached. (Note: Some people like to add in the mashed banana after cooking but I do this before cooking; it’s completely up to you!)
  3. Carefully remove the oatmeal from the hob and allow to cool for a few minutes whilst you prepare the toppings/ wash the fruit.
  4. Pour the chocolate oatmeal into a breakfast bowl and smooth out the top, using the back of a spoon.
  5. Sprinkle with your desired toppings & ENJOY!

Sweet Matcha Oatmeal

  

Ingredients


50g jumbo rolled oats

1 ripe banana, mashed

250ml plant-based milk e.g. almond, coconut

2g VitaLife Matcha Powder (use code MINDFUL16 for 5% off your entire order)

1tsp moringa (can be omitted)

Squeeze of liquid sweetener e.g. rice syrup, date syrup (to taste)

 Suggested toppings:

Sliced fruit e.g. bananas, strawberries

Dollop of peanut butter

Square of vegan chocolate

Tiger Nuts

Warming Chia Oatmeal

When Primal Snack Box approached me asking to write a paleo-friendly blog post, I thought “what better than a warming oatmeal recipe!?”…

It’s that time of the year again when the days are becoming shorter, afternoons are getting darker and all you feel like doing is snuggling up on the sofa in front of the fire with a mug of hot chocolate to watch Christmas films! To help you feel toasty and warm this winter, I’ve adapted a recipe from Organic Burst’s Chia Recipe Book and oh my lord it’s simply divine if I may so myself ❤

Sprouted Oats Breakfast Parfait

In conjunction with Organic September, Planet Organic have asked various British bloggers – including me – to create an organic recipe using one of their newest products, Sprouted Oats. Now, you might be thinking “What on Earth are SPROUTED OATS?” and so I’m here to demystify this seemingly bizarre ingredient for you!

Nuts, grains, beans and seeds are some of the most nutrient dense foods on the planet; however, in the modern-day, we are constantly discovering that foods like these can cause upset stomachs for others. These types of foods are difficult to digest In their dormant form, and other ‘trigger’ foods can extend to glutenous products, processed foods, certain oils… The list is, unfortunately, endless! Therefore, to assist those with Coeliac Disease or other sensitivities, Planet Organic sprout their oats, turning sleepy seeds into activated super foods, bursting with vitality and easily digested nutrients.

Having had the chance to experiment around with Planet Organic’s new product, I’d like to share with you my favourite recipe using their 100% Sprouted Rolled Naked Oats! Other ideas using this ingredient are: simply use in place of regular oats for oatmeal/ smoothies; and in raw bread, crackers and cakes; as well as add to cereal for a different texture. It’s totally versatile so happy experimenting 🙂


SPROUTED OATS BREAKFAST PARFAIT

Ingredients for the oatmeal:

Method:

  1. Cook your oatmeal by boiling the Raw Sprouted Naked Oats in 2 cups of water until the water is fully soaked in.
  2. Once the oats are boiled, pour 1/3 of the oatmeal into a blender (or use a handheld blender), and blend with the dates, banana and cinnamon. Pour into the bottom of a jar. (I added a layer of granola at the very bottom of my jar stage purely for presentation purposes).
  3. Next, blend another 1/3 of the oatmeal with the berries and pitaya. You can blend until smooth, but I like to blend just a little bit so that some of the fruit pieces remain chunky. Layer on top of the date-banana layer.
  4. Pour the rest of the oats into a bowl and mix it with 1tbsp Creative Nature cacao powder until your oats are chocolatey. Add more cacao if you want them even creamier. Layer on top of the pink oats.
  5. Top the chocolate oats with any toppings such as fresh fruit, Creative Nature cocoa nibs etc.
  6. Decorate with desired toppings & ENJOY!

Chocolate Orange ‘Jaffa [Pan]Cakes’

Happy Saturday! We all know what tomorrow means… Pancakes! I simply love Saturdays as it’s always followed by Pancake Sunday and I simply had to share this recipe with you all in anticipation of tomorrow morning 😀

The flavour of this pancake stack was inspired by a childhood favourite of mine – Jaffa Cakes which are a biscuit covered in a chocolate coating and with an orange jelly centre. Now, I wish I could veganise Jaffa Cakes *drifts into a chocolatey-orange daydream* but I am no magician so until then, these pancakes will just have to do!

CHOCOLATE ORANGE ‘JAFFA [PAN]CAKES’

Ingredients:
40g wholewheat flour
40g oat flour (simply blend Jumbo rolled oats)
2tbsp Creative Nature Cacao Powder
200ml unsweetened almond milk and juice of 1 medium-sized orange OR 1 (330ml) Rebel Kitchen Chocolate Orange Mylk Carton
1/2 tsp baking powder
1tsp coconut sugar (any granulated sweetener of your choice is fine)
1tsp coconut oil, melted
orange zest

Method:

  1. Combine the dry ingredients (flour, baking powder, cacao powder and sweetener) in a deep, medium-sized bowl, leaving a well in the centre of the bowl.
  2. Pour all the wet ingredients (almond milk and melted coconut oil) into the centre of the bowl where you made a well in the dry ingredients.
  3. Mix thoroughly until the batter is well-combined, smooth of lumps and fairly thin (add in the orange zest at this point, if using).
  4. Heat a small blob of coconut oil in a non-stick frying pan over a low-medium heat.
  5. Pour batter (I use three flat tablespoons but it will differ according to the size of your pan) onto the centre of the pan while swirling the pan’s handle, using a circular movement of your wrist, to cover the base and create a thin pancake.
  6. Wait until bubbles appear on the top side of your pancake (approx. after a minute) before flipping over with a spatula.
  7. Repeat with the rest of the batter until all your pancakes are cooked.
  8. Layer up the pancakes, filling with banana slices and serving with coconut yoghurt.
  9. Top with your favourite toppings & ENJOY!

Serves 2-3 people.
