Cocoa-Nutty Pancakes

Hey y’all 😀 Now that my second year at uni is wrapped up and (almost) long-forgotten about, I’ve got plenty of time to experiment around in my kitchen this summer to create some new recipes!

The first recipe I’m sharing with you is a breakfast treat featuring Jake’s Boost SuperBoost Butter (aka one of the yummiest nut butters I have EVER tasted!) which will also be posted as part of their exclusive nut butter eBook – how exciting! I actually met the two co-founders, Ansje and Dan (plus their doggo and inspiration, Jake), at a Bloggers Event in Cambridge a few weeks ago and totally fell in love with them, their story, their ethos, and, of course, their products so knew that I had to collaborate with them ASAP – and what better way than a delicious pancake stack recipe!?

Jake’s Boost at the Cambridge Bloggers Event

So without further ado…

COCOA-NUTTY PANCAKES

Ingredients:
40g oat flour (simply blend jumbo rolled oats)
3tbsp sesame seed flour, or any plant-based flour of choice
2tbsp Creative Nature Cacao Powder
1/2 tsp baking powder
1tsp coconut sugar (any sweetener of your choice is fine)
200ml unsweetened almond milk, or any plant-based milk of choice
1 medium ripe banana, mashed
1tbsp plant-based yoghurt
1-2tbsp Jake’s Boost SuperBoost Butter

Method:

  1. Combine the dry ingredients (flour, baking powder, cacao powder and sweetener) in a deep, medium-sized bowl, leaving a well in the centre of the bowl.
  2. Pour all the wet ingredients (almond milk, yoghurt, nut butter and mashed banana) into the centre of the bowl where you made a well in the dry ingredients.
  3. Mix thoroughly until the batter is well-combined, smooth of lumps and fairly thin.
  4. Heat a small blob of coconut oil in a non-stick frying pan over a low-medium heat.
  5. Pour batter (I use two flat tablespoons but it will differ according to the size of your pan) onto the centre of the pan while swirling the pan’s handle, using a circular movement of your wrist, to cover the base and create a thin pancake.
  6. Wait until bubbles appear on the top side of your pancake (approx. after a minute) before flipping over with a spatula.
  7. Repeat with the rest of the batter until all your pancakes are cooked.
  8. Layer up the pancakes, filling with fruit slices and serving with more nut butter if desired.
  9. ENJOY!

Serves 2-3 people.

Cacao and Berry Layered Smoothie

Hey everyone! It’s been so hectic at uni with my exams, rowing training schedule, and general life so I’ve taken a bit of a break from blogging, but I’m back with a new breakfast recipe featuring Vita Coco’s new Coconut Milk – a dairy-free alternative which is a perfect substitute for regular milk. It’s generally been so much fun to experiment around with their new Coconut Milk Alternative so I hope that you’re inspired to do the same.

CACAO & BERRY LAYERED SMOOTHIE

Ingredients:

1 frozen banana

1 cup almond milk

2 tbsp oats

handful of berries

1 tsp cranberry and lingonberry powder (optional)

1/2 medium avocado

2 tbsp cacao powder

3 dates (soaked if needed)

Method:

  1. Blend the first 5 ingredients until super smooth and creamy. Pour half of the mixture into a glass or jar.
  2. Add the rest of the ingredients to the remaining smoothie mix and blend once again.
  3. Carefully pour the chocolate smoothie into your serving jar or glass then pour a layer of the berry smoothie mix.
  4. Alternate between the smoothie mixes.
  5. Then top with some nibbles and more fruit!

True Company Review

When True Company (a beauty company) approached me to ask whether I’d want to collaborate with them, I initially thought that they’d sent the DM to the wrong Instagram account. My usual collaborations are, of course, with health food and fitness companies/ brands so I was confused as to how we could work together. But, alas, the message was for me and it made me realise the importance and intimate link between skin care/ oral hygiene and nutritional health/ regular exercise. Therefore, I’m really excited to announce that I’ve been asked to review two of their products and highlight to you all that looking after your body is crucial from the outside and inside – there’s too much focus in the social media sphere on clean eating, gym routines, and even fad dieting but not enough on the necessity to combine these efforts with an awareness of, and proactive mindset towards, cosmetic care and beautician routines… It’s time to change that!
MIRAI TOOTHBRUSH: This is the product of a truly revolutionary quality! As the newest innovation in the Dental Industry, you’re sure to get top-of-the-range features and quality oral care. After using the rechargeable Mirai toothbrush for just under a fortnight, I can already say that I’m hooked and never going back to my old electric toothbrush. The innovative silicone bristles DO NOT retain bacteria and so ensures the upmost hygiene that you want (especially after a wholesome breakfast) and so a quick, simple 2-3 minute daily and nightly brush keeps those pearly whites looking (well) white and glossy. It’s incredible that the non-porous silicone also prevents bacteria build up, making the Mirai toothbrush virtually self-Sanitising on its own without a separate sanitation unit!!
Because it’s so hygienic and bacteria-free, you only need to replace the brush head ONCE a year – meaning that you’ve got one less thing to worry about in your day-to-day hectic life and more time to cook those waffles or spread peanut butter on your toast… Brilliant – practicality, convenience, and efficiency at its finest👌 It’s also won me over because, yes I am a young female who likes shiny, new, sleek technological products, and the Mirai Toothbrush has a beautiful smart elegant design which will get you feeling modern, hip, and ultra suave. It feels so soft in your hands (unlike other plastic toothbrushes with a poor handle grip) and the bright red colour looks really cool amongst my other toiletries/ bathroom appliances. Plus, it’s really comfortable when brushing; it even has a gentle gum massage function which is so relaxing, soothing your stresses, and maintains the health of your gums at the same time 😁 Basically what I’m saying is that you can freely go eat that falafel wrap or pancake stack because the new Mirari toothbrush has your back and will prevent any nasty bacteria colonies building up in your mouth, and on the toothbrush itself so you get the best possibile oral care today!img_8526
MIRAI FACE BRUSH: As a stressed-out student-cum-rower-cum-food-blogger-cum-socialite-cum-girlfriend (etc. etc.), I lead a very busy life which has definitely taken its toll already (the bags under my eyes are insane), even at the age of 19; so I was so excited to try out one of the most innovative anti-aging tools on the market. I’d say you’re never too young or too old to start taking care of your skin and treating yourself to a pamper session – not just for the visible effects but also for the mental effects i.e. The pleasurable feeling of taking a few minutes out of your life to de-stress and self-indulge in a nightly beauty regime which will give your skin a healthy and happy glow!
Combined with the Mirai face cleanser, I now enjoy the deepest cleansing facial experience ever – my pores have never felt so unclogged in my life; and generally my skin feels more elastic and healthy! It’s remarkable how quickly I’ve started seeing immediate results… Gently massaging and stimulating the skin, the Mirai Face brush has (even after just a couple of uses) established a firmer, and more smoother, more vibrant and youthful appearance. So with the Mirai Cleanser (which is formulated for maximum results), they really are an advanced anti-aging duo to reduce the appearance of fine lines and wrinkles 👍
It’s also designed to suit skin types of all kinds – I naturally have slightly oily skin and have found the Mirai Face brush to be particularly helpful in removing excess oil (as well as make up) but it has silicone bristles compatible for all skin types, so is perfect even if you have dry skin 🙌 It really is the prettiest, softest, most convenient and gorgeous face brush on the market which has rechargeable features so is good for the planet as well – hooray for non batteries! It’s particularly effective when accompanied with ‘superfood smoothies‘ with chlorella or spirulina which also help to promote healthy, happy skin – the Mirai Face brush is the way to go for direct, immediate results if that’s what you’re after!

Fitness Rockstar Spotlight Interview

A few weeks ago a fabulous and very exciting opportunity came up to work with Julia Buckley and her online gym so I had to participate – I love working with people who share the same ethos and outlook on life as me. Julia offers an incredible online workout programme which you can do in the comfort of your own home – for a fraction of the cost of a gym membership or personal training, you can achieve amazing results!

To spread the word of her online gym and newly published eBook “Ignite” to accompany the online workouts, Julia has set up a group of Fitness Rockstars – and I’m lucky enough to be one of them 🙂 What is a Fitness Rockstar?!

The Fitness Rockstars are a collective of people with a mission to make the world a healthier, happier place.

We’re not professional athletes, or even what many would consider typical “fitness people”, but we all appreciate the privilege of having the ability to move our bodies and we’ve all experienced having our worlds rocked by the astounding difference fitness and health has made to our lives.

Neither are we celebrities, or in a position to spread our message to millions of people, but if something we post can help light the fuse that helps anyone to discover myriad of amazing benefits of doing what takes to be fit and strong which ripple out into all areas of life, then we’ll feel like stars for sure.

To help us Fitness Rockstars get to know one other, Julia conducted a small interview…

  1. For me, fitness is all about: Feeling great! There’s nothing more exhilarating than the feeling of blood pumping through your veins, pushing your body to the limit and achieving those fitness goals 🙂 I love the feeling of motivation, determination and productivity which I get when exercising – it makes my whole day feel more positive, active and worthwhile. It also helps my body confidence and makes me more time efficient in other tasks.
  2. I get most excited to do my workout when: I’ve had a bad day… If I’m feeling down in the dumps then the best way to clear my thoughts is to have a good workout session; it helps to channel my frustration/ anger/ negativity into adrenaline and motivation to do that extra rep, run that extra kilometre, or to hold the plank an extra 10 seconds.
  3. When a workout really pushes me to my limit, I think to myself: Wow, great work! I’m always positive when working out as I love the feeling of progressing, seeing results and achieving the goals I’ve set out for myself.
  4. I’m most likely to skip my workout if: It’s raining outside. I suffer quite badly from SAD and the weather/ seasons really affect my mood (which is quite volatile anyway) so the rain outside will dampen my spirits and tempt me to just stay warm inside with a cuppa!
  5. In a group fitness session I’ll be the one who: Puts the tunes on – you can’t have a good workout in silence, it’s all about the motivational bangers to take your mind off the strain/ pain!
  6. The item of exercise equipment I’d most hate to go without is: My yoga mat! I can’t be doing sit ups (or any ab work for that matter) on the cold hard floor – or even worse, the other day, on the wet grass 😥
  7. The last thing I usually do before starting my workout is: Take a selfie at the gym… (Shamefully I will admit to it!!) Yes I’m one of those people who snapchat when they’re at the gym; I mean, I’m going to get hot and sweaty so I’ll be out of snapchat action for the next hour or so…
  8. My top 5 workout music tracks are: 1. Pump It – The Black Eyed Peas; 2.Run the World – Beyonce; 3. Just Like Fire – P!nk; 4. Light It Up – Major Lazer; 5. Stronger – Kelly Clarkson
  9. If I start feeling ‘meh’ about fitness I give myself a boost by: Putting on one of my favourite workout tracks! I love music, dancing and all things related so nothing will give me more of an energy boost than a heartfelt song by P!nk!
  10. The most important thing I’ve learned about fitness in the last year is: Don’t compare yourself to others. It’s easier said than done of course, but there’s nothing worse than comparing yourself to that ultra lean, super fit, uber defined muscleman lifting the equivalent of five times your body weight or that skinny yet toned girl in the gym – it helps no one and will just get you down! Everyone has their own diets, workout regimes; and it’s discovering what’s best for YOU (in terms of lifestyle choices, daily routine, work schedule etc.) which is the important thing.

Let me know in the comments about your fitness regime – What motivates you? Are you working towards a particular goal or just want to maintain a good level of fitness? Do you workout in the gym or at home?

OMG Tea Matcha Review

As part of Thrive Magazine‘s blogger project, co-hosted with OMG Tea (Organic Matcha Green Tea), I was commissioned to create two matcha recipes accompanied with social media posts, two recipe videos (which was so exciting and new for me!) as well as a review of OMG Tea‘s matcha powder…

For those of you who don’t know much about matcha green tea and are confused about what I am talking about, matcha is a powdered green tea grown in specific regions of Japan. Matcha green tea is absolutely incredible in terms of nutrient content as it contains over 137 times the antioxidants of standard green tea, as well as a ‘feel good’ amino acid derivative called L-Theanine. It is also known to improve mental focus and awareness; boost your metabolism (i.e. you can burn fat faster and easier); detoxify the body as it contains cleansing chlorophylls; help fight diseases; and have anti-aging properties.

Now, as a healthy food blogger, of course I’ve heard the plethora of amazing health benefits of matcha powder, and tried the superfood in a variety of ways – in smoothies, sifted and drunk as a tea, sprinkled over oatmeal etc. However, to be honest with you, I was not particularly taken by the craze of matcha – it is definitely for an acquired palette as the taste of matcha is quite strong; it is the chlorophyll and amino acids that give matcha its unique rich taste. I was also not so convinced that I could notice any significant difference in my concentration levels or metabolism – that was until I tried OMG Tea Matcha.

What makes OMG Tea special is that it is the highest quality matcha powder that you can find on the market – you can even tell by the colour of their matcha which is a lighter, more vibrant green colour than other brands of matcha which have a darker, duller colour! I most certainly felt much more energised and relaxed after starting to incorporate their matcha in my meals – blended in smoothies, sprinkled over my breakfast porridge bowl, at afternoon tea time… It was the increase in concentration levels and reviving feeling that most took me by surprise, and as a student I need to be in a focused and stress-free mood, I will definitely continue drinking OMG Tea daily for an energy boost – it’s much healthier and more effective than coffee! It’s now part of my daily routine and is the perfect way to put that extra spring in your step and feel more motivated 🙂 Taken daily, OMG Tea has helped me (and my parents) to shed a few pounds and keep generally fit and healthy.

All in all, I most certainly recommend you try OMG Tea ASAP!
